Salad Platter

+CrazyFoodies onToes  for coming few weeks or for that matter for few months might laze out at home thus you would see more of Hims Kitchen rolling on the blog since there will be lot of cooking involved and less travelling.

Dieting is the very last factor for this kinda regulation but let's face it; going out with a hyper active 8.5 month old who intends to dig into your ceramic plate or vomits on your clothes when you head to a restaurant or has vaccine appointment or needs his parents to be awake in the night just for the sake of it; doesn't allow us to travel or explore restaurants frequently. It is not that we have stopped completely but even if we visit it takes a lot of time for us to update it on the blog as we return home to a baby who demands our attention 24*7 and we are ecstatic to be there for him but that puts the blog in a sluggish pace.

We are trying to be prompt but hey!  more than posting a blog-post catching up on sleep is the top priority right now, so please be patient with us. But being said that; we have been a true loyal with the social media platform so please

Getting back to today's dish or platter. I spontaneously cooked up this dish because I wanted to finish the tit-bits lying in my fridge. So basic rule is to play around with what you have in your pantry or fridge. This platter looks like lot of work but worth the effort especially on a date night or a party night.

I am not going to mentions and measurements cause there weren't any when I was 'cooking this dish up',literally. Plus as I said use what you have, if you have more broccoli use that, if u have chicken use that...if you eat chicken that is.

I had the following Ingredients:
  • Lettuce leaves 
  • Purple or Red Cabbage 
  • Garlic Cloves
  • Red and Yellow Bell Peppers
  • Guacamole : Avocado, Salt, Red Chili Powder, finely chopped onions and tomato smashed together to make a thick paste
  • Sweet Potatoes
  • Corn Cob
  • Lemon
  • Paneer or Cottage Cheese
  • Spring Onion
  • Red Chilli Powder
  • Green Chili Sauce, Soya Sauce and Chili Vinegar
  • Olive Oil

Way to make this platter:
  • Cut
    • Cottage cheese into cubes
    • Chop spring onions
    • Sweet Potatoes into wedges or fries
    • Bell Peppers into cubes 
    • Shred the Cabbage 
    • Cut and peel Avocado. 
    • Fine chop onions, tomato and green chilies.
  • Boil
    • Corn cob & Sweet Potatoes with pinch of salt. I had boiled them together if you have the patience you can do it separately 
    • Once the corn in ready, place it on the plate. Jazz it up with some lemon and red chili powder
  • Make
    • Guacamole 
      • Mash the avocado ,onions.tomatoes, pinch of salt and green chilies together. 
      • Spread the paste onto the platter (See in the slide show below)
  • Saute
    • Sweet Potatoes
      • In a wok drizzle oil and add the boiled sweet potatoe fries in it and sprinkle red chili powder on it.Saute it well till they turn a bit crisp. Add to the plate. 
    • Red Cabbage
      • Heat a tablespoon oil in a wok and add a garlic clove let it sizzle a bit then add the shredded red cabbage and stir fry it till its cooked. It takes 2-3 mins max on high flame. Place it in the platter
    • Bell Peppers
      • After the cabbage add a bit of olive oil and saute the bell peppers till they release their juice. Place it in the plate. 
    • Paneer
      • In the same wok heat oil and add spring onions. let the onions cook a bit then add the cubed paneer pieces. Add the soya sauce, green chili sauce and vinegar as per your taste for oriental cuisine. Saute them quickly on a high flame. Once the sauces leave bit of aroma and oil place it in the plate.

Since all ingredients on my plate were intended hot I had organized everything first and then just started sauteing whatever I found.  Idea is a to have healthy and hot salad. Any questions bring them on?!
