Comfort Food 1: Fusilli Pasta (White)

Yeahhh!!!! It's finally raining. Dark Clouds, cool breezy air, fresh greens across lands and simmering tea kettle, aaah I just love this Rain Season. The scorching heat has surpassed and now what remains is, love blossom. A perfect climate to run errands and feel the chilled blush on your cheeks. It is also a perfect climate for snoozy butts, to not come out of the quilt and rewind into an old TV show from start to finish like say F.R.I.E.N.D.S or Sex and the City. Instantly nostalgic...... :) and instantly craving for something steaming and gorgeously yummy. 

When crave for food in bed, you want something you can put it into big bowl and snuggle along with it in the comforter and grab that television remote. Hence today I share my pasta recipe that is very comforting, very steamy, very Italian hence require very few ingredients and a very weekend luncheon dish

Now, there are three steps or let's say three pan procedure.

  1. The Pasta
  2. The White Sauce
  3. The Veggies: The vegetables are optional. 

So I am going to take you to ingredients and method simultaneously.

Ingredients & Method: 


-For Pasta
  • Ingredients:
    • Pasta : whichever you like, I prefer Fusilli or Spaghetti 
    • Boiling water
    • salt to taste
    • Oil : 1 tbsp
  • Method:
    • Grab a big pot and put in the pasta in it. Fill the pot with water and bring it a boil or straight away add boiling water into it to save time. Turn the heat on to medium flame.Add salt and oil. Let the pasta cook. Keep gently stirring the pasta in between. 
    • The pasta has to be al-dente i.e. just about cooked right. Not too smashed & not too hard. 
    • Once the pasta is cooked, sieve the water through a colander. Do not throw the water away, it is the catalyst which will give our sauce the required consistency. 
    • Run the pasta under cool water to stop it from overcooking and sticking. Keep the pasta aside & now let's make the sauce. 
-For White Sauce
  • Ingredients: 
    • Maida/ all purpose flour: 2-3 Tbsp
    • Butter: 1-2 tbsp
    • Millk:  300 ml or more depending on the texture & consistency one desires i.e. very creamy, loose creamy. 
    • Cheese: 3 cubes
    • Seasoning of Salt, Black peppers, chilli flakes & oregano. 
    • Fresh Cream: optional
  • Method:
    • Non-stick pan up on the heat. Then add some oil and then plop the butter in. Oil doesn't burn the butter. After the butter melts add all purpose flour or maida and saute. 
    • Make sure it is not burning but at the same tie gaining some color of the butter. Now the without getting lumps start adding little bit of milk and whisk with a plastic whisker. Steel whisker will scratch the non-stick. 
    • Keep adding milk, whisk till all the milk absorbs in and forms into a paste like consistency. 
    • You can now add some water which we saved from the boiling the pasta and stir some volume into it. 
    • Once you get the desired texture quality and quantity add cheese cubes and some cream. 
    • Let it come to a boil and then add the seasoning, mix and if you do not want and vegetables you can add the pasta at this moment. 
    • Mix it well with the sauce, shut the heat down, serve it into a bowl.
    • If desired add grated cheese & some parsley for garnish. 
    • If you want the veggies, cook them in pan 3 and add to the white sauce and then add pasta and mix and eat.
-For Veggies
  • Ingredients: 
    • Bell Pepper: Yellow & Red, diced into long threads.
    • Garlic Cloves: 2 finely chopped. 
    • Olive oil: 1-2 Tbsp
    • Seasoning of Salt, Black pepper, chilli flakes & basil.
  • Method:
    • Hot hot pan. In goes some olive oil and garlic cloves, finely chopped. 
    • After the garlic sizzle, add the chop bell peppers.Saute. 
    • Season. 
    • Add it to the white sauce and pasta once cooked.
And Voila!!! We are ready to dig in. This is utterly basic method, you can experiment and chop few more veggies into it like say zucchini, broccoli, corn and all the very popular mushrooms. Plus all the seasoning I have used is from the seasoning packets left when we order in Pizza from Domino's . So no major expenditure require to have a fulfilling Italian meal in the comforts of your own bed :) and watch the sky pour its heart at your window. 

While cooking I was not sure if I would post this on the blog hence no step-by-step photography but the end result was so lusciously appetizing that I had to share with you all.
